Lobster-shiitake roll, apple,
Swedish gin espuma and ginger ale granita

Celeriac fondant, smoked tea aspic,
fermented onion nage and sturgeon caviar

Squid and potato, cauliflower,
crispy buckwheat and langoustine fumet

Diver scallops, butter poached skirt,
lemon thyme velouté and white mushroom purée

Lamb neck “72H”, charred eggplant, semi dried tomatoes,
goat cheese and pumpkin seed vinaigrette

Rapeseed oil sorbet, vanilla cheese cream, rhubarb,
rose essence and roasted rape seed powder
