Springbok tartare, pickled chestnut, chipotle and foie gras

Tuna ‘La Colombe”

Spiced lamb, dukkah and red wine

Seared scallop, char siu pork belly, cauliflower, apple, black forest ham veloute

Plate cleanser

Pan fried linefish, cashew, lemongrass, kimchi coriander, coconut and corn veloute

Three ages of boerenkaas, onion, rhubarb, walnut, cumin

Dulcey Namelaka, basil, raspberry, ginger
